Baking with dear sis. Natalie

 Dear Sister Natalie wanted to bake for her dearest little sister Shin Ru.

Nat: '' Carine... May I ask you to do me a favor? hehehe...''
Me: '' What is it? ''
Nat: '' Can...you.....teach me how to bake...again? '' 
Me: '' LOL... what kind of cake do you want to bake? ''
Nat: '' I don't know woh... maybe..banana cake?is it difficult to bake?''
Me: '' Not really, compared to the cake we baked last time ( low fat lemon yogurt loaf) , I think this is much easier. ''
Nat: '' What about oreo cake? ''
Me: '' Oreo cake?  like...a cake with oreo filling or...?''
Nat :'' Huh? Cake with filling? Is that possible? ''
Me: '' oh gosh...of course...you want to try and bake banana cake with oreo cookies in it? ''
Nat: '' Huh? can ah? sounds good...'' 


And so, 
My dear sister Natalie came in the morning to mess up the kitchen with me.
She came by walking from the baking ingredients shop which located downhills. 

'' What in the world......?!!!! Did you just walk uphill...???? to my house? WITH THOSE BIG BAGS OF INGREDIENTS?! ''

'' Haha...no big deal... [ sweating ] ''

With such sincere. I was prostrated with admiration, I still am.

Interesting facts:
1. Sis Natalie didn't know parchment paper existed. 
When I taught her the technique to line the cake pan with parchment, she was like :'' oh!! wow!! I didn't know we can do that! ''

2. When she works with an electric mixer, she will eventually loose control. Cake batter everywhere.

3. She did all the dishes.
 (BEST PART EVER!!! MUAHAHA!!)
 Well... I cleaned the table and repositioned the ingredients into cabinet. easy peasy lemon squeezy.
 
4. She likes crushing the Oreo cookies. I like eating it. correction, Love eating it.

5.She kept on yelling :'' SMELLS SO GOOD....SMELLS SO GOOD...'' while she was dish washing.. because the cake was baking in the oven.

6. She thought I decorated the cake with cake flour.

I had so much fun baking with Nat. She had such great personality. 
I hope there'll be next time. 

Here's the recipe
(without the oreo cookies. We made some changes ) :



Banana cake Recipe


- 90g canola or sunflower oil ( reduced to
1 tablespoon-ish )
- 90g castor sugar (reduced to 70g)
- 1 large egg, lightly beaten 
- 125g flour (plain flour is fine)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 4 medium-sized bananas, mashed with a fork ( we used 6 bananas)
- 25g low fat milk ( we used 75-85g and add in a tablespoon of vinegar to make buttermilk which will moisten the cake)
- 1/4 tsp vanilla extract

1. Beat egg and sugar till light and creamy.

2. Add milk, mashed bananas, oil and rum, and combine.


3. In a separate bowl, sift flour, baking powder and baking 


soda, and give a quick whisk. Fold in flour into the wet 

ingredients until no traces of flour remain. Do not over-mix.

  Stop the moment everything is incorporated.

5. Pour into a lined 6-inch round tray.


6. Bake at 175 degree celsius for about 40mins, or until 


cooked.


We used a full packet of Oreo cookies and crushed them in a 

zip lock bag. After that we just throw them in to the cake 

batter after step 3. 

We also tripe the portion size to make 2 round 9-inch cakes 

and 1 loaf.

This is my dear sister Natalie, trying to crush the cookies.


 Oxidized mashed banana . Disgustingly beautiful.

We used extra amount of bananas to replace the reduced amount of oil.


Cooling down.

Simple cake. Simple decoration.
Powdered sugar.





This is the Loaf version.

You can clearly see the oreo chunks inside. OH SO GOOD.


This cake doesn't have a beautiful peak on the middle...but........


 ....it has the moistest inside.


Darker in colour than the usual banana cakes due to the oreo cookie crumbs and the oxidized bananas. LOL.
